Return valuation snapshots for a symbol — for accuracy tracking.

Each row contains the fair value estimates and forward-looking predictions
recorded at the time of the valuation run, alongside the price at that time.
Compare forward_pe_fair_value from N days ago against today's price to measure accuracy.
