Realtime (voice-to-voice) models and voices per voice engine, for the
agent's voice-engine picker. The same lists validate voice_realtime_model
and voice_realtime_voice on save (src/constants/realtime_models), so the
picker and the save agree. An engine with no `voices` has a fixed voice.
