`GET /api/v1/exchanges/{slug}`

One exchange profile by slug (e.g. `hyperliquid`, `binance`).

Same shape as a row from `/exchanges`. Returns 404 for an unknown slug — the
known set is in that endpoint's `all_slugs`. No API key required.
