Open a Stripe Checkout session for a paid plan.

``plan`` selects the modality tier: ``pro`` (humans in the browser,
EUR 9.99/mo) or ``dev`` (agents, MCP/API/CLI, EUR 19.99/mo). The chosen
tier is stashed in session metadata so the webhook promotes exactly the
plan the customer paid for — never the caller's current tier.
