`GET /api/v1/da-project/ops/projects`

## Request

- Base URL: `https://api.casaintelligence.com.au` (the document declares no server; this is the origin it was published from)

- Auth: HTTP bearer

Founder ops cockpit: EVERY consumer_da project across all orgs.

For each project the founder sees system-done vs needs-manual at a glance:
stage + label, customer email, document count, and open (todo/in_progress)
vs done task counts. Ordered by most open tasks then most recently updated.

Founder-only — exposes every customer's address/email, so it is gated to the
founder allowlist (matching the website /app/ops email gate). Declared before
/{project_id} so FastAPI matches the literal path before the UUID route.
