Update application configuration (admin/superadmin only)

  - `emailConfig` object
    - `host` string
    - `port` integer
    - `secure` boolean
    - `user` string
    - `pass` string, password

  - `webhookRetries` integer
  - `checksRetention` integer — Days to retain check results
