`GET /options/iv/surface`

2D implied-volatility grid: rows are strikes, columns are expiries (sorted by ascending DTE). Useful for vol-surface visualisations and identifying skew/term-structure shape at a glance.

- `symbol` 'BTCUSDT' | 'ETHUSDT' | 'SOLUSDT' | 'HYPEUSDT': Trading symbol: BTCUSDT, ETHUSDT, SOLUSDT, or HYPEUSDT.
